I promise this is the easiest cookie recipe with only a few ingredients.
These cookies were buttery and delicious and not too sweet. (You can also change the sweetness by using sugarless jam/fruit spread)
You will need heart shaped cookie cutters in at least 2 sizes for this.
1 pound butter (4 sticks, salted)
1 cup sugar
4 cups all purpose flour.
1/4 tsp pure vanilla extract
Strawberry (or whatever flavour you prefer) Jam
Preheat oven to 375.
Cream sugar and butter with light and fluffy, add flour.
Kneed dough, and roll out onto a cutting board/counter. (you may want to sprinkle some flour to avoid sticking).
Roll dough flat and cut out large hearts for bottom layer.
Cut out the same # of large hearts for top layer, then using a smaller cookie cutter, cut out the middle of the top layer to create the “window”.
You may use the cut outs (leftovers) and make them alone.
Bake cookies for 14-17 minutes. Keep an eye on them. Remove from oven when golden brown.
Cool on wire rack.
Spread jam on bottom layer, and place the tops (with the cutouts) over them to create a sandwich.
Sprinkle with icing sugar and serve.
